  • 1 cup crushed pineapple well-drained
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely chopped pecans for mixing into the cheese ball
  • 1/2 cup finely chopped green bell pepper
  • 2 tablespoons finely chopped green onion
  • 2 tablespoons finely chopped red bell pepper optional, for added color
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder

  • 1 cup finely chopped pecans for coating

Method
 

  1. In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  2. Gently fold in the well-drained crushed pineapple, shredded cheddar cheese, 1/2 cup chopped pecans, green bell pepper, green onion, and red bell pepper if using.
  3. Season the mixture with garlic powder, onion powder, and salt. Mix thoroughly until all ingredients are evenly distributed.
  4. Spoon the mixture onto a piece of plastic wrap. Gather the wrap around the mixture and shape it into a tight, round ball.
  5. Refrigerate the cheese ball for at least a few hours (overnight is best) to allow the flavors to meld and the texture to firm up.
  6. Just before serving, roll the chilled cheese ball in the remaining 1 cup of finely chopped pecans, pressing gently so they adhere well.
  7. Transfer to a serving platter and serve with your choice of crackers, fresh veggie sticks, or sliced baguette.
