  • cups powdered sugar
Chocolate Coating

  • 1 tablespoon coconut oil or shortening

Method
 

  1. In a large bowl, combine the peanut butter, softened unsalted butter, and pure vanilla extract. Mix until smooth and creamy.
  2. Gradually add the powdered sugar about ½ cup at a time, stirring continuously until the mixture becomes firm enough to roll into balls without sticking to your hands.
  3. Scoop approximately 1 tablespoon of the mixture and roll between your palms to form small balls. Place the balls onto a parchment‐lined baking sheet.
  4. Chill the peanut butter balls in the refrigerator or freezer for about 30 minutes until they are firm.
  5. Meanwhile, in a microwave‐safe bowl, combine the semisweet chocolate chips and coconut oil. Microwave in 20-second bursts, stirring between each interval, until the chocolate is completely melted and smooth.
  6. Using a fork or skewer, dip each chilled ball into the melted chocolate, allowing any excess to drip off before placing them back on the parchment paper to set.
  7. Allow the chocolate to firm up before serving. Enjoy these delectable treats on their own or pair with a scoop of vanilla ice cream or a warm mug of coffee.
