Ingredients

  • 1 lb Beef smoked sausage, sliced into rounds
  • 1 lb Baby potatoes, halved (or quartered if large)
  • 12 oz Fresh green beans, trimmed
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried parsley
  • Salt and pepper to taste
  • 1/4 teaspoon Red pepper flakes (optional)
  • Fresh parsley or grated Parmesan (optional garnish)

Equipment

  • Large baking pan
  • Mixing utensil (spatula or clean hands for tossing)

Method

  1. Preheat your oven to 400°F.
  2. On a large baking pan, combine the sliced sausage, halved baby potatoes, and trimmed green beans ensuring the ingredients are spread out well for even roasting.
  3. Drizzle the olive oil over the ingredients. Sprinkle garlic powder, onion powder, smoked paprika, and dried parsley evenly over the pan. Add salt and pepper to taste and, if using, the red pepper flakes.
  4. Use your hands or a spatula to toss everything together until well coated with the seasonings.
  5. Spread the mixture into an even layer and place in the oven. Bake for 20-25 minutes, stirring halfway through to ensure even browning.
  6. Check that the potatoes are fork-tender and that the dish has a beautiful golden hue. Remove from the oven, garnish with fresh parsley or a dusting of grated Parmesan if desired, and serve immediately.

Notes

This recipe is highly adaptable for busy weeknights. You can swap the beef sausage for chicken, turkey, or even a plant-based alternative, and you can substitute the baby potatoes with red potatoes or even sweet potatoes. Frozen green beans work fine if thawed and patted dry. A final garnish of fresh herbs or Parmesan cheese elevates this simple dish to restaurant quality.
