Ingredients

  • 2 cups Unsweetened shredded coconut
  • 1 cup Soft caramel candies about 20 pieces
  • 2 tablespoons Milk or heavy cream
  • 1 cup Semi-sweet chocolate chips
  • 1 teaspoon Coconut oil or butter
  • 1/4 teaspoon Vanilla extract
  • Pinch Salt

Equipment

  • Dry skillet
  • Plate
  • Parchment-lined baking sheet
  • Small saucepan
  • Microwave-safe bowl
  • Tablespoon or small cookie scoop

Method

  1. Toast the Coconut: Spread 2 cups of unsweetened shredded coconut evenly in a dry skillet over medium heat. Stir frequently for about 5–7 minutes until the coconut turns a beautiful golden brown and releases a heavenly toasted aroma. Transfer the toasted coconut to a plate to cool.
  2. Prepare the Caramel: In a small saucepan over low heat, combine 1 cup of soft caramel candies (about 20 pieces) with 2 tablespoons of milk or heavy cream. Stir continuously until the candies melt into a smooth, glossy caramel. Remove from heat and mix in 1/4 teaspoon of vanilla extract and a pinch of salt.
  3. Combine Coconut with Caramel: Pour the cooled toasted coconut into the caramel mixture and stir until every strand of coconut is thoroughly coated.
  4. Shape the Cookies: Using a tablespoon or a small cookie scoop, drop heaping mounds of the coconut-caramel mixture onto a parchment-lined baking sheet. Gently flatten and shape each mound into a round cookie. Expect the mixture to be a bit sticky.
  5. Prepare the Chocolate Coating: In a microwave‑safe bowl, combine 1 cup of semi‑sweet chocolate chips with 1 teaspoon of coconut oil (or butter). Microwave in short bursts, stirring between intervals, until the chocolate is completely melted and silky smooth.
  6. Assemble and Chill: Dip the bottom of each cookie into the melted chocolate or drizzle the chocolate over the top, based on your preference. Place the cookies in the refrigerator and allow them to set for about 30 minutes before serving.

Notes

These no bake Samoa cookies offer a delightful alternative to traditional baked cookies and can be easily tweaked to suit your taste—use heavy cream for extra rich caramel or substitute dark chocolate for a less sweet coating. They are perfect for a quick fix when you need something sweet and can be stored in an airtight container in the refrigerator. The process is simple and fun; from toasting the coconut to watching the caramel melt, every step adds to the anticipation of that first heavenly bite.
