Ingredients

  • 1 cup creamy peanut butter
  • 1 cup butterscotch chips
  • 1/2 cup chocolate chips optional, for richer flavor
  • 3 cups chow mein noodles crispy, dry type
  • 1 cup shredded coconut optional, for texture and sweetness

Equipment

  • Microwave-safe bowl
  • Baking sheet
  • Parchment paper
  • Spoon

Method

  1. In a large microwave-safe bowl, melt butterscotch chips, chocolate chips (if using), and peanut butter together. Heat in 30-second intervals, stirring between each, until completely smooth.
  2. Gently fold in chow mein noodles (and shredded coconut, if using) until evenly coated.
  3. Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
  4. Refrigerate for about 30 minutes, or until firm enough to handle.

Notes

These treats can be stored in an airtight container at room temperature for 5-7 days. For variations, try white chocolate instead of butterscotch chips, add crushed pretzels for extra crunch, or substitute almond butter for peanut butter. You can also experiment with different cereals like crispy rice or corn flakes in place of chow mein noodles. A drizzle of caramel or sprinkle of sea salt on top adds a delicious finishing touch.
