- In a large microwave-safe bowl, melt butterscotch chips, chocolate chips (if using), and peanut butter together. Heat in 30-second intervals, stirring between each, until completely smooth.
- Gently fold in chow mein noodles (and shredded coconut, if using) until evenly coated.
- Drop spoonfuls of the mixture onto a parchment-lined baking sheet.
- Refrigerate for about 30 minutes, or until firm enough to handle.

These treats can be stored in an airtight container at room temperature for 5-7 days. For variations, try white chocolate instead of butterscotch chips, add crushed pretzels for extra crunch, or substitute almond butter for peanut butter.
