- In a mixing bowl, combine the 8 oz of softened cream cheese with 1 cup of shredded sharp cheddar cheese until smooth and well blended.
- Add half of the crumbled bacon (from the 1/2 cup), 1/4 cup chopped fresh chives, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, and 1/4 teaspoon black pepper. Stir until the mixture is cohesive.
- Using a small cookie scoop or about 1 tablespoon of the mixture, roll between your palms to form neat little balls.
- In a shallow bowl, combine the reserved bacon, extra chopped chives, and 1/4 cup chopped pecans (if using). Roll each cheese ball in this coating mixture until evenly covered.
- Place the coated cheese balls on a parchment-lined tray and refrigerate for at least 30 minutes to allow them to firm up.
- Just before serving, insert mini pretzel sticks or toothpicks into each ball for an easy grab-and-go appetizer.
