Ingredients

Ingredients
  • 12 large hard-boiled eggs peeled and chopped
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 3 green onions finely sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika plus extra for garnish
  • Salt and black pepper to taste
  • 3 strips cooked bacon crumbled, optional

Equipment

  • Large pot
  • Large mixing bowl
  • Spatula
  • Refrigerator

Method

  1. Place the eggs in a pot and cover with water. Bring to a boil and cook for about 10 minutes until the eggs are firm. Once done, drain, cool, peel, and chop the eggs into small pieces.
  2. In a large mixing bowl, blend the softened cream cheese, sour cream, and mayonnaise until smooth and lump-free. A hand mixer or sturdy spoon works well for this step.
  3. Stir in the shredded cheddar cheese, finely sliced green onions, garlic powder, onion powder, smoked paprika, and season with salt and black pepper to taste.
  4. Gently fold in the chopped eggs and the crumbled bacon (if using), taking care to maintain some texture rather than pureeing the mixture.
  5. Transfer the dip to the refrigerator and let it chill for at least 30 minutes to allow the flavors to meld. Before serving, sprinkle a little extra smoked paprika over the top for garnish.

Notes

This Humpty Dumpty Dip is a crowd-pleasing appetizer that can be made ahead of time, allowing the flavors to fully develop in the refrigerator. Its creamy texture combined with the savory and smoky nuances of bacon and paprika can be easily customized with substitutions like Greek yogurt or a different cheese. Serve with veggie sticks, crackers, or toasted baguette slices for a delightful snack, and store any leftovers in an airtight container for up to 2 days.
