Ingredients
  

For the Meatloaf
  • 1 1/2 pounds ground beef 80/20 mix works best
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 2 large eggs beaten
  • 1/4 cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper freshly ground if available
For the Glaze
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1/2 tsp mustard Dijon or yellow

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, beaten eggs, milk, Worcestershire sauce, salt, and pepper. Mix gently until just combined; avoid overmixing to keep the meatloaf tender.
  3. Shape the mixture into a loaf on the prepared baking sheet or press it into a loaf pan.
  4. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and mustard to make the glaze.
  5. Spread half of the glaze evenly over the meatloaf. Bake in the preheated oven for 55 minutes.
  6. After 55 minutes, remove from the oven, baste with the remaining glaze, and return to the oven for an additional 15 minutes, or until the meatloaf is cooked through.
  7. Allow the meatloaf to rest for 10 minutes before slicing. Serve warm with your favorite sides.

This meatloaf recipe is ideal for those who love a traditional, home-cooked meal with a modern twist. For a lighter version, you can substitute half of the ground beef with ground turkey.
