  • 1 pound ground sausage (mild or spicy, your choice)
  • 8 ounces cream cheese softened
  • 1 cup sour cream
  • cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies) drained
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper optional, for heat
  • Salt and black pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Method
 

  1. Preheat your oven to 350°F.
  2. In a large skillet over medium heat, cook 1 pound of ground sausage until it is nicely crumbled and browned, about 5-7 minutes. Be sure to break it up with a wooden spoon as it cooks, and drain off any excess grease.
  3. In a large mixing bowl, combine 8 ounces of softened cream cheese, 1 cup of sour cream, 2 tablespoons Worcestershire sauce, 1 teaspoon garlic powder, 1 teaspoon onion powder, and the ½ teaspoon of cayenne pepper (if using), along with salt and pepper to taste. Mix until smooth and creamy.
  4. Fold the cooked sausage, the drained can of Rotel, 1½ cups of shredded sharp cheddar cheese, and 1 cup of shredded mozzarella cheese into the creamy mixture. Note that the cheese may not fully melt yet, but that’s what the oven is for.
  5. Spread the mixture evenly into a greased 9×9 or 8×8 baking dish. Bake uncovered in the preheated oven for 25-30 minutes until the edges are bubbly and the top develops a golden color.
  6. Once baked, remove from the oven and sprinkle chopped fresh parsley or green onions over the top. Allow the dip to cool for about 5 minutes before serving.
  7. Serve with tortilla chips, crackers, or veggie sticks for a tasty party snack.

Notes

This dip is highly versatile and can be easily modified to suit different tastes. For a lighter version, swap the sausage for ground turkey or chicken. Be sure to drain both the sausage grease and the Rotel well to prevent a watery dip. You can even prepare the dip mixture ahead of time and bake it just before serving to impress your guests.
