  • 8 oz lo mein noodles or spaghetti Cooked al dente, then drained and rinsed
  • 1 lb ground beef
  • 1 tablespoon vegetable oil
  • 1 cup shredded carrots
  • 2 cups shredded green cabbage
  • 1 red bell pepper Thinly sliced
  • 3 green onions Chopped; use the white parts for cooking and reserve the green parts for garnish
  • 3 cloves garlic Minced
  • 1 teaspoon fresh ginger Grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon brown sugar
  • 1/2 teaspoon toasted sesame oil
  • 1/4 cup beef broth or water
  • 1/4 teaspoon black pepper
  • Sesame seeds Optional, for garnish

Method
 

  1. Cook the lo mein noodles (or spaghetti) according to the package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. While the noodles are cooking, heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground beef and cook until nicely browned, breaking it up with a spoon. Drain excess grease if necessary.
  3. Add the minced garlic, grated ginger, and the white parts of the chopped green onions to the beef. Sauté for 1-2 minutes until fragrant.
  4. Mix in the shredded carrots, shredded green cabbage, and thinly sliced red bell pepper. Then add the sauce ingredients: low-sodium soy sauce, oyster sauce, hoisin sauce, brown sugar, toasted sesame oil, beef broth (or water), and black pepper. Stir well to combine.
  5. Toss in the pre-cooked noodles and stir until they are evenly coated with the sauce. Allow the mixture to heat through for about a minute.
  6. Garnish with the remaining green parts of the green onions and a sprinkle of sesame seeds, if using. Serve immediately.

Notes

This Ground Beef Lo Mein is a quick and versatile dish perfect for busy weeknights. You can easily swap the beef for ground turkey, chicken, or even tofu for a different twist. Extra vegetables like snap peas, mushrooms, or broccoli can be added to suit your taste. Leftovers develop even richer flavors after a day in the fridge, making it a great lunch option.
