Method
- Line a 9×13 inch baking sheet with parchment paper or a silicone mat and lightly butter the surface to prevent sticking.
- In a heavy-bottomed saucepan over medium heat, combine the unsalted butter, granulated sugar, water, and a pinch of salt. Stir continuously until the butter melts and the mixture becomes smooth.
- Bring the mixture to a boil while stirring gently but consistently. Attach a candy thermometer and continue cooking until the temperature reaches 290°F, the hard crack stage, and the color turns to a gorgeous golden amber.
- Remove the saucepan from the heat and immediately stir in the vanilla extract (be cautious as the mixture may bubble up).
- Quickly pour the molten toffee onto your prepared baking sheet. The toffee will start to set almost immediately.
- Sprinkle the semi-sweet chocolate chips and toasted chopped pecans or almonds evenly over the hot toffee so that they slightly melt into the surface.
- Allow the toffee to cool completely and set before breaking it into pieces. Enjoy your homemade candy!
Notes
This Georgia’s Melt-In-Your-Mouth Toffee is a rich yet simple treat that requires only a few high-quality ingredients, making it perfect for holiday gifts, midnight snacking, or impressing dinner guests. Variations such as using white chocolate or different nuts can easily tailor the flavor to your taste, and small add-ins like crushed peppermint or a dash of cinnamon can offer a delightful twist. Toasting the nuts and using a candy thermometer are key to achieving the perfect texture. Store any leftovers in an airtight container at room temperature for the best flavor and crunch.
