- In a small bowl, combine the softened unsalted butter, olive oil, minced garlic, chopped parsley, grated Parmesan cheese, and a pinch of salt. Mix until all the ingredients are well incorporated to form a fragrant garlic butter spread.
- Generously spread the garlic butter mixture on one side of each of the four bread slices. Make sure every corner is well coated for maximum flavor.
- Place two slices of bread butter-side down in a skillet set over medium heat. Layer two slices of mozzarella cheese on each bread slice, then top with the remaining bread slices, keeping the buttered side facing up.
- Cook until the bottom of the sandwich turns golden and crispy, which should take about 3-4 minutes. Carefully flip the sandwiches and cook the other side for another 3-4 minutes until it is equally golden and the cheese is perfectly melted and stretchy.
- Remove the sandwiches from the skillet, let them rest for a brief moment, and then slice each one diagonally. Serve immediately to enjoy the ultimate mix of crunchy, garlicky bread and melty cheese.
Notes
This recipe is very versatile. Feel free to experiment with different cheeses such as fontina or pepper jack, and try other types of hearty bread like ciabatta or sourdough for a different texture. Garlic powder works as a great substitute if you prefer a milder garlic flavor, and the dish pairs wonderfully with tomato soup or a crisp green salad for a complete meal.
