- Butter one side of each of the 4 bread slices with the softened butter. The buttered side will become the golden, crispy exterior when toasted.
- Heat a skillet over medium heat. Place all 6 slices of bologna in the skillet without adding extra oil. Fry them for about 2-3 minutes until the edges start to curl and turn golden brown. Flip each slice and fry the other side until equally crispy. If the bologna puffs up too much, score an 'X' in the center or press it lightly with a spatula.
- To assemble the sandwich, lay one bread slice butter-side up. Layer two fried bologna slices on top, then add a slice of cheese, followed by another two bologna slices. If you like a tangy crunch, add the optional pickle chips at this point.
- Spread the mayonnaise (and yellow mustard if using) on the inside of a second bread slice, then top the layered bologna and cheese with this slice, ensuring the buttered side is facing out.
- Place the assembled sandwich back in the skillet. Cook on medium heat until the bread turns golden brown and the cheese melts into gooey perfection. Enjoy the sizzle and the delicious blend of textures and flavors.
Notes
This fried bologna sandwich is highly adaptable. You can experiment by swapping bologna for ham, salami, or a plant-based alternative, and changing up the cheese to pepper jack or Swiss for different flavor profiles. The choice of bread also offers variety – try sourdough, rye, or Texas toast. For extra flavor, consider adding caramelized onions, a fried egg, or sriracha mayo.
