- Caramelize the onions: In a skillet, melt 2 tablespoons of butter over medium heat. Add the thinly sliced onion and cook for 10-12 minutes until they turn a gorgeous golden brown. Transfer the caramelized onions to a bowl and set aside.
- Prepare the meatloaf mixture: In a large bowl, combine 2 pounds of ground beef, 1 packet dry onion soup mix, 2 minced garlic cloves, 1 cup breadcrumbs, 2 large eggs, ½ cup milk, ½ cup grated Parmesan cheese, 2 tablespoons ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon dried thyme (or Italian seasoning), ½ teaspoon black pepper, and ½ teaspoon salt. Mix until just combined without overworking the meat.
- Form the mixture into a loaf shape that will comfortably fit in your slow cooker.
- Place the meatloaf in the slow cooker and pour 1 cup of beef broth around (not directly over) the meatloaf.
- Top the meatloaf with the prepared caramelized onions. If desired, sprinkle 1 cup of shredded Gruyère or Swiss cheese on top during the last 30 minutes of cooking for that classic French onion finish.
- Cover and cook on low for 5-6 hours (or on high for 2-3 hours) until the internal temperature reaches 160°F.
- Once cooked, serve with extra ketchup on the side if desired.
