Ingredients
  

  • 2 pounds ground beef 80/20 recommended
  • 1 packet dry onion soup mix 1 oz
  • 1 medium onion thinly sliced
  • 2 cloves garlic minced
  • 1 cup breadcrumbs plain or Italian
  • 2 large eggs
  • ½ cup milk
  • ½ cup shredded mozzarella cheese optional, for inside loaf
  • ½ cup grated Parmesan cheese
  • 2 tablespoons ketchup plus extra for topping
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme or Italian seasoning
  • ½ teaspoon black pepper
  • ½ teaspoon salt adjust since the soup mix is already salty
  • 2 tablespoons butter
  • 1 cup beef broth
  • 1 cup shredded Gruyère or Swiss cheese for topping

Method
 

  1. Caramelize the onions: In a skillet, melt 2 tablespoons of butter over medium heat. Add the thinly sliced onion and cook for 10-12 minutes until they turn a gorgeous golden brown. Transfer the caramelized onions to a bowl and set aside.
  2. Prepare the meatloaf mixture: In a large bowl, combine 2 pounds of ground beef, 1 packet dry onion soup mix, 2 minced garlic cloves, 1 cup breadcrumbs, 2 large eggs, ½ cup milk, ½ cup grated Parmesan cheese, 2 tablespoons ketchup, 1 tablespoon Worcestershire sauce, 1 teaspoon dried thyme (or Italian seasoning), ½ teaspoon black pepper, and ½ teaspoon salt. Mix until just combined without overworking the meat.
  3. Form the mixture into a loaf shape that will comfortably fit in your slow cooker.
  4. Place the meatloaf in the slow cooker and pour 1 cup of beef broth around (not directly over) the meatloaf.
  5. Top the meatloaf with the prepared caramelized onions. If desired, sprinkle 1 cup of shredded Gruyère or Swiss cheese on top during the last 30 minutes of cooking for that classic French onion finish.
  6. Cover and cook on low for 5-6 hours (or on high for 2-3 hours) until the internal temperature reaches 160°F.
  7. Once cooked, serve with extra ketchup on the side if desired.
