Cranberry Brie Bites

Ingredients
  

  • 1 sheet puff pastry about 8 oz, thawed
  • 8 oz Brie cheese rind on or off, cut into small cubes
  • 1/2 cup cranberry sauce homemade or canned whole-berry
  • 1 tablespoon honey optional, for extra sweetness
  • 1 tablespoon chopped fresh rosemary or 1/2 teaspoon dried
  • 1 egg beaten, for egg wash
  • 1 tablespoon chopped pecans or walnuts optional, for topping

Method
 

  1. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin pan.
  2. Unfold the puff pastry sheet on a lightly floured surface and use a sharp knife or pizza cutter to cut it into 24 small squares.
  3. Press each pastry square into a mini muffin cup to form a small pastry nest.
  4. Place a small cube of Brie cheese in the center of each pastry nest.
  5. Spoon about 1/2 teaspoon of cranberry sauce on top of the Brie. If desired, drizzle with the honey for extra sweetness.
  6. Sprinkle the bites with chopped rosemary and, if using, a few pieces of chopped pecans or walnuts.
  7. Brush the exposed pastry edges with the beaten egg to help them achieve a golden, glossy finish.
  8. Bake in the preheated oven for 13-15 minutes or until the pastry puffs up and turns a beautiful golden brown.
  9. Let the bites cool for a minute or two before removing them from the pan, as the cheese will be very hot.
