- Preheat your oven to 375°F (190°C) and lightly grease a mini muffin pan.
- Unfold the puff pastry sheet on a lightly floured surface and use a sharp knife or pizza cutter to cut it into 24 small squares.
- Press each pastry square into a mini muffin cup to form a small pastry nest.
- Place a small cube of Brie cheese in the center of each pastry nest.
- Spoon about 1/2 teaspoon of cranberry sauce on top of the Brie. If desired, drizzle with the honey for extra sweetness.
- Sprinkle the bites with chopped rosemary and, if using, a few pieces of chopped pecans or walnuts.
- Brush the exposed pastry edges with the beaten egg to help them achieve a golden, glossy finish.
- Bake in the preheated oven for 13-15 minutes or until the pastry puffs up and turns a beautiful golden brown.
- Let the bites cool for a minute or two before removing them from the pan, as the cheese will be very hot.
