Ingredients

Ingredients
  • 2 medium zucchinis about 2 cups shredded
  • 2 large eggs
  • 1/2 cup shredded mozzarella cheese for the base
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded mozzarella cheese for topping
  • fresh parsley or basil optional, for garnish

Equipment

  • Oven
  • Baking sheet
  • Parchment paper
  • Large bowl
  • Clean kitchen towel or cheesecloth
  • Box grater or food processor

Method

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Shred the 2 zucchinis using a box grater or food processor. Wrap the shreds in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible to ensure crispiness.
  3. In a large bowl, combine the squeezed zucchini with 2 large eggs, ½ cup shredded mozzarella cheese, ¼ cup grated Parmesan cheese, 1 teaspoon garlic powder, 1 teaspoon Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Mix until well incorporated.
  4. Spread the mixture onto the prepared baking sheet, pressing it into a thin, even rectangle so that it bakes uniformly.
  5. Bake for 20-25 minutes until golden brown and firm to the touch.
  6. Remove the baking sheet from the oven and sprinkle 1 cup shredded mozzarella cheese evenly over the top. Return to the oven and bake just until the cheese is melted and bubbly.
  7. Allow the dish to cool slightly, then slice into breadstick shapes. Garnish with optional fresh parsley or basil if desired and serve while still warm to enjoy the melty, cheesy goodness.

Notes

These Cheesy Zucchini Breadsticks are a versatile, healthier twist on traditional breadsticks. You can customize with different cheeses like cheddar or pepper jack and add extra veggies such as finely chopped bell peppers or spinach for added flavor and nutrition. For a protein boost, consider tossing in crumbled bacon or turkey, or swap eggs for a flax egg if needed. They are best served warm with a side of marinara, alfredo sauce, or a refreshing salad.
