  • 1 can cherry pie filling 21 oz (595g)
  • 1 can mandarin oranges 15 oz (425g), drained
Creamy Mixture & Extras
  • 1 cup sour cream 240 ml
  • 1 cup mini marshmallows 90 g
  • 1 cup sweetened shredded coconut 120 g
  • 1 cup chopped pecans or walnuts Optional, 120 g

Method
 

  1. Drain the pineapple chunks and mandarin oranges thoroughly. In a large mixing bowl, combine the pineapple, mandarin oranges, and the entire can of cherry pie filling.
  2. Gently fold the fruits together, ensuring they retain their shape and texture.
  3. Add the sour cream and fold it into the fruit mixture until everything is evenly coated.
  4. Mix in the mini marshmallows, sweetened shredded coconut, and, if using, the chopped pecans or walnuts. Stir gently so that all ingredients are well combined.
  5. Cover the bowl with plastic wrap and chill in the refrigerator for at least one hour. This resting time allows the flavors to meld and the marshmallows to soften slightly.
  6. When ready to serve, spoon the salad into individual bowls or cups.

Notes

This no-cook fruit salad is an ideal make-ahead dessert that only improves with time as the flavors meld.
